Ancient traditions show themselves in so many different ways but many times we look right past them or don’t even notice the unique history or qualities they add to our lives. With SPRING celebrations in full swing here in Galicia having just celebrated Semana Santa, or Holy Easter Week, highlighting a very special time as the SUN has passed over -or risen – from the dark days of winter known as “invierno” (Latin: inferno – hell or winter season) – the passover – marking that fantastic time reminding us that there will be more hours of the SUN SHINING each day – wonderful SUN and LIGHT in the sky for us to enjoy.
With the sunshine comes the time to prepare, plant and grow many delicious culinary treasures. One such Spanish Treasure is OLIVE OIL – BRIGHT LIKE THE SUN – and incredibly diverse in its flavors and uses. “Olive oil accounts for a mere 0.8% of Spain’s exports. As it is the same in creating a unique and fine olive oil. The climate and region along with the varietal combine to give each olive oil its distinctive flavor and TASTE! So have a little fun trying out new one’s and with Spain as the number one producer with the largest variety of this ancient delicacy you are sure to find more than one that is a favorite!
